Carina's Mini Choc-Rum Puddings
Ingredients
Combine cake crumbs, nuts, syrup, rum, butter and fruit mince in a large mixing bowl.
Stir until mixture comes together. Roll into small balls. Place on tray and refrigerate until firm.
Place dark chocolate and shortening in a medium heatproof bowl. Stand over a pan of simmering water, stir until chocolate and shortening have melted and the mixture is smooth.
Using 2 forks, dip balls into melted chocolate, let excess run off and place balls on tray, refrigerate until chocolate is firm.
Place white chocolate and cream in a small heatproof bowl and melt over a simmering pot of water, stir until chocolate has melted.
Spoon half a teaspoon of the white chocolate on top of each ball and allow to run down the sides (this will look like custard on a plum pudding), place a small slice of glazed cherries on top before chocolate sets.
Very nice with coffee
