Erika's Baked Potatoes
The following Ingredients will serve 4 people
Baked Potatoes- Ingredients
Preparation
Scrub potatoes, pat dry and pierce skin with fork several times. Bake in oven on (180 C) for 1 hour or until tender.
Cut the cooked potatoes in half and scoop out flesh, leaving small amount on the shell.
Place the flesh in a bowl and mash well, mix in the smoked ham speck, creamed corn, sour cream, cheese, chives and pepper to taste.
Spoon mixture back into the potato shells and bake in hot oven (200 C) for about 15 minutes or until heated through and golden.

If you cannot obtain some Ham speck, Smoked Ham will work
fine.
It's easy to make and really tasty to
eat.!!
